Strawberry Salad

Today I remembered how nice it is to have strawberries in salad.  They have a lovely sweet, but slightly tart taste and do great with fresh basil, salad leaves, pumpkin seeds and this balsamic dressing:

Strawberry Salad

1 bowlful of whatever leaves you have – e.g. butterhead, rocket, small chard, mustard greens

1 handful fresh basil leaves, torn

10 – 15 strawberries, washed and quartered or halved

1 handful toasted pumpkin seeds

2 chive flowers to decorate (if you have)

Dressing:

1 teaspoon runny honey

1 teaspoon strong Irish mustard (that’s what I had to hand – dijon would be good I think)

2 tablespoons balsamic vinegar

4 tablespoons olive oil

sea salt & black pepper to taste

Strawberry Salad

For a proper meal I think a blue cheese would do ok with this…….. and a lump of crusty bread and some EV olive oil and……wine, maybe.
