Mexican Cooking Class

Go to this class!  Last night I went to a brilliant introductory mexican class in Cafe Azteca on Lord Edward St (Top of Dame St.) in Dublin.  It started at 6pm and we made our own corn tortillas, quesedillas, sopas, salsa and guacamole.  Hugo Camacho Romero runs the cafe and classes and is very passionate about real Mexican ingredients and cooking.  Yay, I had been looking for real flour for tortillas for ages and he sells it.  He’s waiting to gluten-free certification on the flour, so it’s good news for you coeliacs too!

The corn tortillas just contain corn masa flour and water, followed by a little kneading and rolling into a cylinder that’s cut up like this before flattening out the tortillas.

Tortilla Dough

A very straight forward flattening process means you can definitely do this at home.  Each disc is placed between two pieces of cut-out plastic bag and pressed down with a flat, smooth wooden tile:

They can be cooked on a dry non-stick pan, and a little instruction from Hugo on this is required here.

No instruction, however, was needed to dig into the yummy results and I would recommend this amazing value evening to you all!

Mexican Dinner

This was an introductory class and Hugo runs follow-on classes for more Mexican delights.  I was also really glad to find out that tomatillos are widely used for green salsas because last year we were at a bit of a loss as to what to do with them…. and you may even see some of the tomatillos from our tunnel in Cafe Azteca!

    Hi Sarah, My friend did this class about a month ago & loved it aswell. I might look into it. sounds great. the tortillas sound easy to make! yum. Vickscakes


    • Hi Vicky – it was really good, especially had been looking for good Mexican ingredients. There’s 3 classes – this introductory one and 2 more. He caters for groups like birthday etc as well. It’s a nice evening and very cheap – €15, I went with my sister
